Why did my edit change font?

To keep files small, a PDF normally embeds only the letters its text uses. If your new text needs a letter that was never in the document - a capital Q in a file that had none, say - the original font in the file simply does not contain it, so the line is drawn in the closest standard font. Using only letters that already appear in the same font keeps the original look.

Is the old text really gone?

Yes. The words are removed from the page's content, so they cannot be copied, searched or recovered from the saved file. That is the difference from tools that paint a white box over text, which looks right but leaves the original in the file.

Can I edit a scanned PDF?

Not here: a scanned page is a picture, with no text in it to change. The OCR Toolkit can read the text from it and make the PDF searchable.

Is the PDF I edit sent anywhere?

No. It is read, edited and saved in your browser; nothing is sent anywhere.

About editing text in a PDF

A PDF is built to print the same everywhere, not to be edited, so changing a single word in one usually means Acrobat Pro or an online editor that uploads the file and limits how many edits you get for free. This page edits the text itself, in your browser.

Each line of text on the page becomes clickable. Type the new wording and the line is rewritten inside the PDF - not covered with a white box, which would leave the old words in the file for anyone to copy or search out. Where the PDF's own font has every letter the new text needs, it is written in that font, at the same size, colour and place. A PDF usually carries only the letters it uses, though, so where a new letter is missing the line is drawn in the closest standard font instead - sans, serif or monospaced, bold or italic to match - and marked so you can see which. Find and replace changes a word everywhere at once. It is free to use, with no account and no upload limit, and it runs entirely in your browser: nothing is uploaded, and while the page stays open, a feature you have already used keeps working offline.
